Indian Gooseberry Curry (Amla Sambar)

Ingredients:

1. Big sized gooseberries - 8 in number
2. Tomatoes - 4
3. Zinger and garlic paste - 2 spoons
4. Curry leaves, turmeric and red chilli powder -1/2 spoon
5. Coriander powder -1 tea spoon
6. Sugar -2 tea spoons
7. Salt to taste
8. 4 table spoons of oil

Other ingredients:

Asafetida - very little amount
Cumin seeds -1 spoon
Onion seeds -1/2 spoon
Menthi (mentulu) -1/4 spoon
Mustard -1/2 spoon.

Method of preparation:

1. First of all boil ½ liter water, then add 1/2 spoon salt and 2 spoons of sugar to that water.

2. Then cut each goose berry into 6 parts (the 8 gooseberries into 48 pieces) and all are put into water, taken in another vessel and boil them for 5 minutes. Then the gooseberry pieces are filtered and keep them aside.

3. Take pan and pour oil in pan and heat it and then add zinger and garlic paste and mix the paste with that oil and then add curry leaves.

4. Then add inguva, cuminseeds, onion seeds, menthulu and aawalu (their quantities are given above) to the contents in the pan (3) and stir them all.

5. Then add turmeric, red chilli powder, coriander powder and also salt to taste to the contents in the pan (4).

6. Then add tomato cut pieces to the contents (5) and heat them for 7-8 minutes or until the oil is completely absorbed.

7. Finally add boiled gooseberry pieces (2) to the contents in the pan (6) and stir all the contents in the pan and heat them on a moderate flame (little heat insufficient), for a while.
